The combination of gin, lemon juice, and Champagne brings out the best in each: it’s tart, refreshing, herbal, and effervescent.

The roots

Of all the many champagne-and-liquor combinations known to contemporary mixology, this one has the most élan.

Although The Bellini might be the best-known champagne cocktail, the French ’75 is an all-time classic – and some would argue more delicious. Sophisticated, elegant and refreshing, with plenty of poke worthy of its name.

Named after the French 75mm field gun, a ruthless and efficient weapon from World War I, this stunning aperitif is likely to have been created by Harry MacElhone at Harry’s American Bar, Paris, in 1925.

The combination was said to have such a kick that it felt like being hit by that weapon.

Simplicity is something that many classic cocktails have in common, and the combination of a good Dry Gin, a beautiful Champagne, some freshly squeezed lemon juice and a hint of sugar is the definition of simplicity. The subtle complexity of the ingredients complement each other without being overpowered.

The cocktail became very popular from the film “Casablanca”, where Yvonne’s German boyfriend orders it at Rick’s (Humphrey Bogart’s) bar.

One barman in 1947, called it a Tom Collins with champagne instead of club soda. Vive la difference!

The makin’s

1 part dry gin
12 part simple syrup
12 part fresh squeezed lemon juice
Brut Champagne
Lemon twist, to garnish

The drill

Combine gin, simple syrup, and lemon juice in a cocktail shaker filled with ice.
Shake until well chilled and strain into a glass.
Top with Champagne and garnish with a lemon twist.
